Ugali, Nyama Choma and Kenyan Dishes: A Guide to Must-Try Foods and How They Are Eaten

Ugali, nyama choma, sukuma wiki, githeri, pilau and mandazi form a short list of Kenyan dishes that give a real taste of the country, from highland homes to coastal kitchens and roadside grills.

Kenyan dishes are generally simple, filling and designed for sharing. Many are eaten by hand, and the best way to learn them is to follow a local host or guide.

Here is a plain-spoken guide to what each dish is, how it is eaten and where to find it. For the broader picture of drinks, regional styles and safari dining, see Kenyan food and drink.

This guide is part of our Uganda people, culture and history guide. When you are ready to plan, see our Uganda safari packages or the Ameera Africa Safaris Uganda tours homepage.

Overview

Ugali

Ugali is a firm porridge made by stirring maize flour into boiling water until it becomes thick and smooth, then shaping it into a mound. You pinch a piece, roll it into a ball with your fingers, press a dent with your thumb and use it to scoop up stew, fish or vegetables. It is mild by itself, so the accompaniment gives the flavour. Many lodges serve it at lunch, and local restaurants make it fresh. Wash your hands first, as it is eaten without cutlery.

Nyama

Nyama Choma

Nyama choma means roast meat, and it is one of Kenya's great social foods. Goat or beef is grilled over charcoal, cut into pieces on a board and served with salt, kachumbari and ugali. Friends and family share it at roadside joints and in gardens at weekends, often with a drink. Ask for a mix of cuts if sharing, and expect it to take time to cook. Read about its cultural place in Kenya food, nyama choma and Swahili culture.

Sukuma

Sukuma Wiki and Other Greens

Sukuma wiki, meaning push the week in Swahili, is a dish of kale or collard greens sautéed with onions and tomatoes. It is cheap, nutritious and eaten with ugali, rice or meat. Other greens, including spinach and traditional leaf vegetables, appear on menus too. Vegetarians often find sukuma wiki a reliable option. Its name reflects how it helps stretch a budget until the end of the week.

Githeri

Githeri, Mukimo and Irio

Githeri is a hearty mix of boiled maize and beans, sometimes with potatoes or greens, and it is a common everyday meal in central Kenya. Mukimo is a mash of potatoes, maize, beans and greens, while irio is a similar dish made with peas and maize, both associated with Kikuyu cooking and described in the Kikuyu culture guide. They are filling and often served with stew or roast meat at celebrations.

Coastal

Coastal Dishes: Pilau, Biryani and Mahamri

Pilau is spiced rice cooked with meat and fragrant spices, and biryani adds layers of seasoned rice and marinated meat or chicken. Coconut curries, grilled fish and prawns, and sweet treats such as mahamri, a cardamom-scented fried bread, round out coastal tables. These reflect centuries of trade with Arabia and India, as described in Swahili coast culture and history. Try them in Mombasa, Diani or Lamu, using the Kenyan coast guide to plan.

Fish

Fish, Chapati and Snacks

Around Lake Victoria, tilapia is fried whole and served with ugali and greens, which you can read about in the Luo culture guide. Chapati, a layered flatbread of Indian origin, accompanies stews and beans. Mandazi is a lightly sweet fried dough for breakfast or tea, and samosas, roasted maize and kachumbari-topped snacks are sold in towns. Choose busy stalls, and follow health advice in the Kenya health guide.

How

How to Order and Eat Politely

Ask your guide to recommend places, and order a few dishes to share. Wash hands before eating, use your right hand, take modest portions and accept second helpings gracefully. Mention allergies or dietary needs clearly, particularly in remote areas. For drinks to accompany meals, see Kenyan coffee and tea, and for phrases to use at the table, see Kenya languages and Swahili phrases.

Trying

Trying Dishes at Home

If you enjoy these dishes, you can recreate simple versions at home: ugali needs only maize flour and water, sukuma wiki uses any robust greens, and kachumbari is just tomato, onion and lime. Ask cooks for tips on texture and seasoning, and consider joining a cooking class in Nairobi or on the coast, where you can learn techniques directly and taste what you make.
