Kenyan Food and Culture: Nyama Choma, Ugali, Chai and Swahili Coast Flavours

Grilled meat, maize porridge and spiced tea, with coastal flavours of coconut and spice.

A traditional Kenyan meal often features ugali, a stiff maize porridge, served with stews, greens such as sukuma wiki and grilled meat. Nyama choma, grilled goat or beef shared with friends, is the national social dish, eaten at roadside grills and in family gatherings.

On the coast, Swahili cuisine adds coconut, tamarind, cardamom and cloves, with fish, rice and pilau on the menu. Tea is usually brewed with milk and spices and drunk throughout the day. Meals are communal and unhurried, and guests are encouraged to eat with their hands where this is the custom.
